I want to know if you can set the degree of fat content in TextView? For example, the standard Roboto font has the Ultra-Bold 900 look, but the question is, can the text be made like this?

Standard tools can only achieve Bold / Normal / Italic / BoldItalic ( proof )
As an option - the use of custom font with the desired type of "fat" for the necessary controls. Read about custom font here

font-weight: bold|bolder|lighter|normal|100|200|300|400|500|600|700|800|900 here are the possible values for font-weight. Bold corresponds to 700, then 800 and 900 will be fatter
