In the Apache folder are logs that are numbered, updated and archived according to some of their own rules. The question is how to find out where these rules are defined and configured, and how to change them?

This process (numbering, updating, archiving, etc.) is called log rotation. The logrotate utility is responsible for this.

     man logrotate

On Ubuntu, the settings are in the /etc/logrotate.conf file (it may be different on other systems).
