Hello, I have little experience in erlang, but there is an urgent need to poll multiple servers using udp and tcp protocols. Where to start, in which direction to dig? I have already started learning erlang, but much is still not clear, there is very little practical information on the net.

You will need to create a separate process for each server that will poll it. The process is most convenient to create using gen_server, and connect it as a child to some supervisor.
At this erlang-specificity is exhausted here, otherwise everything will be just like in any other language.
