With one accelerometer in the desired plane (xy), this can be done only if you absolutely know exactly which point the device is rotating around. If the axis of rotation is unknown, then additional data sources, such as a gyroscope, will be needed.

UPD For Roll and Pitch, in principle, for a device resting or evenly moving, it is possible to build on the acceleration of gravity. For Yaw, this trick will not work.
