Is it possible to monitor the activity, the disk load of the virtual machine? (VirtualBox, VMWare + Windows server 2008) Essentially, virtualka is stored locally in the file, and how will virtualka show write speed, activity? In general, will it show or all the time will simulate that there is no load on the HDD (virtual)?

If you start an activity monitoring program on a virtual machine, it will only see the disk load that the programs inside the virtual machine create.

The load on the disk from the programs on the host system and from other virtual computers will not be visible.
