Hot Keys Minimize Maximize:
For Windows:
- Ctr + - / + Folding, minimize / maximize
- Ctr + Shift + - / + Folding, collapse / expand all
For Mac:
- COMM + SHFT + - / + Folding, roll up / down

Settings if English IDE:
Settings >> Editor >> General >> Code Folding
In the IDE, foldings are specially made in order not to unfold them, otherwise it will be very difficult to interact with the code. Usually, annotations and pieces of code that are not used are folded, so by default the IDE does not expand foldings.
