Yes you can. Create two domains and on each hold the necessary CMS

Yes, you can install at least 10 different CMS. Take for example OpenServer. In the domains/ directory, create:
- wordpress /
- opencart /
- magento /
- prestashop /
- webasyst /
For each of these local domains, create a database in phpMyAdmin and connect it to your local site.
In XAMPP everything is exactly the same, only there are not domains/ , but htdocs/

Hosts: Depending on the OpenServer settings (hereinafter referred to as OS) you can create a new hot folder by simply adding a folder in / domains /
Or manually add it using the toolbar in the tray (do not forget to restart the OS after that)
