Here are some good manuals for setting up your server environment:

Gunicorn or uwsgi is difficult to say which is better, but in my opinion it is easier to set up gunicorn, I advise you to use it.

P.S. if necessary, you can always go to uwsgi, if it shows the best results when testing.
